I do that often, at least here lately. I am trying to get my sea legs back in the kitchen after the no water for three months incident.
There was the Chocolate Chip Cookie recipe Aunt Betty passed our way, and then I took a look at our pantry. I noticed I had molasses, and I thought to myself, why not try something new?
So I got to work in creating a new recipe, and I have to tell you, it ended up being so yummy! My husband is a huge fan of molasses cookies, but I didn't have time to make cookies. When I am short on time, I like to bake sweet breads.
Initially, I thought a molasses cinnamon bread would be the ticket. Oh, I added the cinnamon, but I felt like it needed a bit of something else, and that is when I grabbed my Gingerbread Spice. Hit it out of the park, I am telling you.
This sweet bread ended up tasting like gingerbread. It was perfect out of the oven with a pat of butter on top. The molasses bread was moist, perfectly flavored, and all I heard was mmmm...
So let's see what you need to recreate this recipe, and yes, I made it gluten free, but I think you could use regular flour for this recipe too. I didn't do anything fancy, just ingredients I had in the pantry.

Gluten Free Molasses Bread
This gluten-free molasses bread uses everyday ingredients. Almond milk works perfectly, and you can substitute regular flour if gluten-free isn’t needed. The gingerbread spice adds warmth and depth, turning a simple molasses bread into something that tastes like the holidays.
This gluten-free molasses bread is a simple quick bread recipe that works for breakfast (oh yes, I did!), dessert, or an afternoon snack.
Ingredients for Gluten-Free Molasses Bread:
1¾ cups gluten-free flour blend, I used a cup-for-cup gluten-free flour blend
-
¾ cup brown sugar
-
½ cup molasses
-
2 eggs
-
⅓ cup melted butter
-
¾ cup milk (I used almond milk)
-
1 tsp baking soda
-
1 tsp cinnamon
-
½ tsp salt
- 1/2 tsp gingerbread spice
How to Make Gluten-Free Molasses Bread:
- Preheat oven to 350°F. Grease a loaf pan.
In a large bowl, whisk together flour, baking soda, cinnamon, and salt.
In another bowl, mix brown sugar, molasses, eggs, melted butter, and milk.
Pour wet ingredients into dry and stir until fully combined.
Batter will be thick but pourable.
Pour into loaf pan and smooth the top.
Bake 45–55 minutes, until a toothpick comes out mostly clean. 45 minutes was perfect using our oven
Cool in pan 10 minutes, then remove and cool completely before slicing (if you can - of course, I couldn't wait).
A Cozy Bread That Feels Like the Holidays
So my bread did sink in the middle, but that was A-ok with me. A sunk bread doesn't affect the taste, that is for sure. A little pat of butter was the delicious final touch.
I didn't add the gingerbread spice until the end. I do not know about you, but when I am creating, I sample what I am making so I know if I should add a little something before it goes into the pan.
I felt like the sweet bread batter definitely needed a little something, something. I headed over to my spices to see what I could find, and gingerbread spice stuck out like a sore thumb to me.
I began getting Christmas vibes, and since I do not feel like we really had a chance to celebrate Christmas with the kitchen being torn apart, and we did not have running water then, I thought I could use a Christmas pick-me-up today.
I added in that half teaspoon, and sampled my dough, and thought this is just what it needed! Now, I will tell you, I am a huge fan of gingerbread. We go way back... it is something my mom would make when we were growing up around the holidays.
I could eat it year-round. I am an equal opportunity recipe maker, and devourer. You won't find me keeping certain recipes just for holiday time. If I like it, I will bake it. This is one recipe that will be sticking around here.
The smell of molasses and cinnamon filling the kitchen while this bread bakes is half the reward. It comes out soft, dense, and sliceable, the kind of bread that begs for butter while it’s still warm.
You will have to share with me if you decide to give this one a try. Go ahead, I know you want to. See you soon with more updates on the kitchen.
