Looking for a creative low carb recipe that uses leftovers in a delicious way? This mashed cauliflower dish blends creamy cauliflower with a slice of leftover crustless chicken bacon ranch pizza for a comforting, gluten-free meal that’s big on flavor. It's a great way to reduce food waste while sticking to a keto or low carb lifestyle. Whether you're reinventing dinner or just need something easy, this cheesy mash is satisfying and simple to whip up. Perfect for anyone with gluten sensitivities or just avoiding carbs. This unique twist on cauliflower mash may become your new favorite way to use leftovers!

Have you ever stared into your fridge, saw one lone piece of crustless pizza, and thought, “Well, what now?” No? Just me? Well, welcome to my kitchen, where anything goes — especially when it comes to leftovers. Around here, nothing goes to waste, not even that last slice of crustless chicken bacon ranch pizza.

In one of my “let’s just see what happens” moments, I grabbed a head of cauliflower and decided to turn that pizza into something completely new — a creamy, cheesy, low carb mash that might just outshine the original.

This isn’t your grandma’s mashed cauliflower (unless she was also tossing pizza into hers). It’s savory, satisfying, and perfect for those days when you want comfort food without the carb crash. Oh — and it only takes about 15 minutes from start to finish.

This one’s for my fellow low carb adventurers who like their food flavorful, their meals simple, and their leftovers fabulous.

A Little Leftover Magic

Let’s talk about that pizza for a moment. You know how there’s always one piece left? In our house, I usually wrap it up and tell myself I’ll reheat it tomorrow — and sometimes I do. But this time, I looked at that lonely slice like a blank canvas.

I thought, what if I could transform it into something new? Something warm and creamy with a hint of that original ranch and bacon flavor still hanging around? That’s how this low carb mashed cauliflower recipe was born.

It’s one of those easy low carb meals that makes you feel like a kitchen genius, even when it’s just Tuesday and you’re running low on groceries.

Loaded Cauliflower Mash

Ingredients:

  1. 1/2 head of cauliflower, cut into pieces
  2. 1 piece of crustless chicken bacon ranch pizza
  3. 1 T all natural bacon bits
  4. 1/4 c shredded cheese (cheddar, Monterey Jack, or pepper jack are all great here)
  5. Pepper, yum!

How to Make Mashed Cauliflower with Leftover Pizza

Instructions:

  • Steam the Cauliflower
Add cauliflower pieces to a microwave-safe dish with about 4 tablespoons of water. Cover and microwave on high for 5 minutes or until fork-tender.

  • Puree It Smooth
Transfer the cauliflower to a food processor and blend until smooth. You want it creamy and lump-free — this is your base.

  • Build the Flavor
Scoop the mash into a small pot over medium heat. Add your pizza slice (yes, just toss it in!), bacon bits, shredded cheese, and black pepper. Stir gently until everything melts together and gets nice and hot.

  • Serve and Savor
Dish it up in a cozy bowl and enjoy right away. Trust me, this one hits the spot.

Why This Works for Low Carb & Keto Lifestyles

Cauliflower is a staple in many low carb dinner ideas — and for good reason. It’s versatile, naturally gluten-free, and takes on the flavors of whatever you pair it with. Instead of a carb-heavy pasta or potato side, this mash gives you all the comfort with none of the crash.

And using leftovers creatively like this? That’s a win for your wallet, your time, and your blood sugar.

Whether you're following keto, doing your best to keep your meals low glycemic, or simply trying to eat a little lighter, this recipe fits the bill.

Variations to Try

Don’t have a piece of crustless pizza lying around? No problem. This recipe adapts beautifully:

  • Use leftover rotisserie chicken and a spoonful of ranch dressing for that same flavor combo.

  • Toss in some chopped roasted veggies for extra oomph.

  • Add a spoonful of cream cheese or sour cream for even more creaminess.

  • Swap cheddar for parmesan, gouda, or mozzarella depending on what you’ve got on hand.

This is your sign to experiment. Use what you love and make it yours!

Kitchen Tips for the Best Mashed Cauliflower

  • Steam it well: Soft cauliflower = creamy mash. Don’t rush this part.

  • A good food processor is your friend: Chunky mash has its place, but for this? Smooth is where it’s at.

  • Season boldly: Don’t skimp on the pepper — or anything else that packs flavor.

Serving Ideas

This dish works great as:

  • A quick lunch when you’re short on time.

  • A creative side dish for dinner — pair it with grilled chicken, steak - like I did, or even meatballs.

  • A savory snack when you want something warm, filling, and guilt-free.

It’s like mashed potatoes — only smarter, lighter, and way more fun.

Thoughts from my Cottage Kitchen

Some people plan their meals. I peek in the fridge, have a chat with whatever’s in there (yes, I do talk to my food), and see where the day takes me. This mashed cauliflower recipe is one of those unexpected moments that ended up being a total keeper.

It's humble, hearty, and high on flavor — and a gentle reminder that creativity in the kitchen doesn’t require fancy ingredients or a culinary degree. Sometimes all it takes is one little leftover and a head of cauliflower.

If you’re on a low carb journey or just love a good kitchen experiment, I hope this one earns a spot in your recipe box.

Thanks for joining me today. Now, go talk to your fridge and see what magic you can make.

    1. Hi Debbie, thanks for the visit! I did not think about E6000, I will have to check it out. I need to look at some new flowers for our porch, they are looking pretty shabby. I think they have been out there for a while now. Flowers in general are not my strong suit, they usually end up crossing over to the other side in my care. Sad to say, my faux flowers are looking worse for the wear too.

    1. LOL, well... this was one of those ideas I had, and said let's give it a try and see what happens. I do not think it would have worked with a pizza with a crust, but the crustless worked out well with this recipe.
