Chicken Skillet

Searching chicken skillet?  We have an easy chicken skillet dinner option to share with you today!





I love those evenings when it is close to 5:00 pm and I still have no idea what I am going to make for dinner.  Nothing really thawed out, have not even thought about dinner, what to make, what to make?  


In case you were wondering, I am not happy with myself when I find myself in this predicament.  It makes me think why did you not put more thought into dinner?


Do you find yourself doing this?  Or am I the only one out there who has an  unorganized brain when it comes to dinner?


Some evenings I think, oh it's that time again?  I sometimes think dinner feels like a chore.  If it were just me, I would probably skip it all together some nights, but I have to feed hubby and the pup, who could ever forget that cute face?  Not this momma, that is for sure.


The other night I found myself in this same dilemma, the ever lovin' rut of what's for dinner.  I brought out a bag of chicken, and since it was frozen, they were sticking all together.  I thought ok, no problem.  I will just use the Ninja Santa brought me for Christmas.


Wow, did the chicken turn out wonderful!  I was so happy.  Doesn't it look so yummy?





TIP: I always make more than I need so I only need to bake chicken one night, and then I can create other recipes for the rest of the week with the remainder of the chicken.  No multiple thawing, baking, cooking, prepping... just one night of it, and then you can create whatever your heart's desire the rest of the week.  How nice is that?

Chicken Skillet 


What you will need:
  • 1 onion chopped
  • 1 green pepper chopped
  • 1 can of Rotel 
  • I can black beans
  • 1 c cooked rice
  • 1 chicken breast baked & diced
What you need to do:
  • Chop onion and green pepper, place in skillet coated with olive oil
  • Add can of Rotel
  • Add black beans
  • Add cooked rice to mixture
  • Let simmer
  • Add baked chicken breast (we used our Ninja air fryer) to mixture
  • Serve, YUMMY!



Do you see how easy this dinner was to throw together?  Sometimes I think I need to be all elaborate, but when you're down 6 points, and only 30 seconds left in the game, you decide that touchdown is what you need to bring in the victory win in!


LOL, did I really just reference football?  Wouldn't hubby be so proud?  He knows sports are so not my thing, but I decided to enlighten him a bit.  




All of those flavors mix and absorb into each other and this dish was so yummy, Mr. VS said put it to the new top of the list!  He does that every now and then when he finds something he likes.  Sometimes he likes something so much he will request it until he tires of it and then I need to create something new.  


I think we all do that, have our favorites that we turn to when we are not sure what to make.  Since I have been experimenting, my options keep increasing!  I get tired of making the same menu items over and over too.  I like a little variety, after all, it is the spice of life.  
  



Just when I think we cannot come up with a new twist on chicken, something new surfaces.  Thank you for following along with our recipe creations.  We really have enjoyed sharing them with you all.
