What is Alice Springs Chicken?

In my version, I decided to skip the bacon (my husband actually didn’t miss it at all) and simplify the sauce situation. He loves to dip his chicken in homemade ranch dressing anyway, so it was a win-win.
Ingredients you'll need
Here’s what I used, but feel free to make it your own:

Chicken thighs (use as many as you need — I like thighs because they stay juicy, but chicken breasts work too)

Shredded cheese, I chose colby jack for its creamy melt and mild flavor

8 oz white button mushrooms, washed and sliced

How to make my Alice Springs Chicken

In a large skillet, heat olive oil over medium heat.

Season your chicken thighs with salt, pepper, and a little garlic powder if you like. Place them in the skillet and cook until they’re browned on the outside and no longer pink inside. (Cooking times can vary depending on thickness — I do a test cut into the center of my chicken to check if they are no longer pink.)

In a separate skillet, add a drizzle of olive oil and toss in your chopped onion and green pepper. Season with garlic powder, salt, and pepper. Cook for a few minutes until they start to soften.

Add in the sliced mushrooms last since they cook quickly. Continue sautéing until everything is tender and lightly browned.
