Easy Baked Chicken (Gluten‑Free, Minimal Prep!)

We’ve been using curbside pickup at Gordon Food Services (GFS) lately, and their fresh chicken breasts are huge — I usually slice one into halves or even thirds. Easy Baked Chicken


Ingredients

  • 2 chicken breasts

  • 1 container Pico de Gallo

  • Optional: shredded cheese (regular or dairy‑free — I like Shreds when I’m avoiding dairy)


Instructions

  1. Preheat your oven to 350°F.

  2. Line your baking pan with foil for easy cleanup.

  3. Place chicken breasts in the pan and pour the entire container of Pico de Gallo over the top.

  4. Bake for 1 hour, depending on the size of your chicken breasts.

  5. Add cheese during the last 10 minutes if you want it melty and delicious.


That’s it. Truly. The oven does all the work while you do literally anything else.

Easy Side Dishes


Sautéed Spinach


I never measure this — it’s a “dump and cook” situation.

  • Add about 1 Tbsp olive oil to a skillet.

  • Fill the pan to the brim with fresh spinach.

  • Season with garlic powder, salt, and pepper.

  • Cover and cook until wilted (just a few minutes).


Sweet Potato Fries

  • Slice 1 large sweet potato into fry‑shaped strips.

  • Place on a lined baking sheet.

  • Season with Lawry’s and pepper.

  • Bake for 1 hour — right alongside the chicken.


I love that both dishes cook at the same temperature. One timer, zero stress.
