Sometimes, the best things in life come about unexpectedly. Take this apple oat bread for instance! It all started with a frustrating tech day – no phone, no internet, no access to my usual recipe planning routine. Stuck at home, I needed an outlet for my pent-up energy.


Venturing into the kitchen, I initially had visions of a fluffy Easter dessert to share with the family. You see, I love finding ways to sneak healthy ingredients into delicious treats, keeping everyone happy and nourished.


With Easter just around the corner, and a grocery delivery on the horizon, I opted for a simple recipe using pantry staples. This surprise creation turned out to be a delightful hybrid: a touch more substantial than a cake, yet not quite as dense as a traditional bread.


Here's the beauty of it all – this apple oat bread is incredibly easy to make, perfect for a quick and satisfying breakfast or a guilt-free afternoon snack. Plus, it's packed with wholesome ingredients like rolled oats and fresh apples, making it a win-win for taste and health.

Apple Oat Bread Ingredients:

  1. 1 1/2 c rolled oats
  2. 1 c sweetened applesauce
  3. 4 apples sliced into 4 sections
  4. 1/2 c blueberries + 1/2 c blueberries, separated 
  5. 2 T rolled oats


Apple Oat Bread Instructions:

  1. Pulverize and Combine: This recipe is a breeze thanks to the power of a blender, or in my case, a Vitamix. Simply toss all ingredients except the last ½ cup of blueberries and 2 tablespoons of rolled oats into your blender (the Vitamix worked wonders here!).
  2. Blend it Up: Turn on your blender and let it work its magic. The goal is to transform the apples into a smooth applesauce and grind the oats into a flour-like consistency.
  3. From Batter to Bake: Preheat your oven to 350 degrees Fahrenheit. Since I was initially aiming for a cake-like texture, I used a 9-inch pie pan for this recipe. However, a loaf pan would work just as well. Pour the blended mixture into your chosen pan.
  4. The Finishing Touches: Sprinkle the top of the batter with the remaining 2 tablespoons of rolled oats and the reserved ½ cup of blueberries. This adds a delightful textural contrast and pops of color to the finished bread.
  5. Baking Time: Pop your apple oat bread into the preheated oven and bake for 37 minutes.


This recipe is the epitome of simplicity, just the way I like it! The resulting bread/cake is delightfully moist, with a texture that falls somewhere between the two. I even think I could have gotten away with adding another ¼ cup of rolled oats for a slightly denser consistency. The real star of the show, though, is a pat of salted butter on top. It elevates the entire experience to a whole new level of deliciousness.

    1. Like in my craft projects, I tend to experiment in the kitchen. Sometimes things do not necessarily go together by normal standards, but I just look at it as a science experiment to see what works. This recipe was out on a limb, and I had really hoped for a cake, but it ended up being more of a bread in the end.
