Are you tired of eating the same thing every night? Me too. That’s actually why I try so many different recipes—I’m always in search of something new that excites my taste buds. My husband, on the other hand, often asks if I can just pick one recipe and stick with it when it comes to certain vegetables. But apparently, I can’t. I grow bored with food far too easily.


(Shh, don’t tell my mom I said the word bored. That was a forbidden word in our house growing up—right up there with “hate” and “can’t.”)


Lately, I’ve been experimenting more with low carb recipes, partly for health reasons, and partly because it’s just the direction we’re trying to go as a household. I’ve done the low carb thing before—lots of meat and eggs—but these days, eggs aren’t agreeing with me like they used to, and I’m trying to limit red meat. So, that leaves me with chicken, turkey, and yes, the occasional pork chop.


This week, I decided to make green beans and pork chops. Simple, right? But the green beans got a full-on makeover, and I’ve got to say—they stole the show.

After flipping through a couple of low carb cookbooks for inspiration, I went to the fridge to see what I could throw together. A few staples caught my eye: canned green beans, some leftover heavy whipping cream from the fat bomb experiment, and cheese. Lots of cheese. Mozzarella and that green can of parmesan—you know the one.


So, I thought, let’s try something new. Cheese with green beans? I’ve never done that before, but why not?


Ingredients for This Easy Low Carb Green Bean Casserole:

  • 3 cans green beans (14.5 oz each, drained)

  • ½ cup heavy whipping cream

  • ½ cup parmesan cheese (yep, the kind in the green shaker)

  • 1 cup shredded mozzarella

  • 1 teaspoon garlic powder

  • ½ teaspoon black pepper


Instructions:

  1. Preheat your oven to 350°F.

  2. Drain your green beans and spread them evenly in a 9x13 baking dish.

  3. Drizzle the heavy whipping cream over the beans.

I've been taking extra time to read a lot more labels lately and to find out the difference between UPF (ultra process foods vs process foods) and have been shocked at the things I thought were ok to eat at one time.
