Healthy and Delicious: Green Bean and Sweet Potato Recipe

Usually the star of my dishes is the protein, but today?  Oh we are sharing a wonderful recipe for veggies.  Oh my goodness, oh my goodness!  I was over the moon with how this green bean recipe turned out. 


I had taken out pork chops for dinner the other night, but did not really have a plan for a side dish at that time.  I just went about my day, and when dinner time came around, I was like hmmm... what side should I make? 


I know my husband loves green beans, but really I get so tired of canned green beans that I sometimes think yuck.  So I grabbed a bag of frozen green beans from the freezer and thought about what other vegetable would compliment them?


I opened the fridge, and staring me in the face was a sweet potato.  I said can I?  Do green beans go with sweet potatoes?  Should I even think it?  Will he even try it?  Then I said oh well, let's get this experiment on the road and see what we can come up with.


I had never had sweet potatoes with green beans, nor had I really seen this as a recipe anywhere before, but I thought nothing gained, nothing lost.  Sometimes you just have to wing it and see what you come up with, so that is exactly what I did.   


They were so delicious that I did not even care when my husband walked in the back door and said what?  Sweet potatoes with green beans?  I am not even touching that, yuck!  I said that is perfectly fine, more for me.  They were that good.




Healthy and Delicious: Green Bean and Sweet Potato Recipe


What you will need:
  1. 1 package frozen green beans, thawed
  2. 1 medium sized sweet potato, chopped
  3. 1 T olive oil
  4. 1 t garlic powder
  5. 1 dash cayenne pepper
  6. Salt & pepper to taste 
  7.  2 T honey drizzled over veggies

What you need to do:
  • Place thawed green beans into olive oil coated skillet on medium heat
  • Chop up entire sweet potato into size of your desire, I went with smaller pieces
  • Add spices to veggies in skillet
  • Drizzle honey over veggies and cook until green beans are to your liking


Green beans and sweet potatoes are both healthy and delicious vegetables that are loaded with nutrients, such as fiber, vitamins, and antioxidants.  When combined, they create a flavorful and nutritious dish that is perfect as a side or main dish.  We will show you how to make a simple and yummy green bean and sweet potato recipe.


I plan to add this as a regular menu item for us for dinner, or should I say me, just me!  I am keeping them all to myself.  Hubby would not even try them, sometimes I want to just shake my head and say men!  But then, I was like that is perfectly fine, I love this vegetable recipe and I will gladly gobble them all up every time I make them.




In case you were wondering... yes, I did try a new pork recipe.  I was feeling like a bit of ranch for some reason.  Not my usual go to, but the combination of the pork, and green bean sweet potato concoction, I was in heaven.


I simply mixed two tablespoons of ranch seasoning with one teaspoon of smoked paprika.  There were six pork chops in the package and I made them all.  Remember my cook once, dinner twice rule.  It worked!  My husband loved the pork chops, and I was in love with my veggies so over all it was a good night.  




Once I had the spices mixed together, I sprinkled the mixture over my pork chops on both sides and put on the air fryer.  I used the same time and temp as I used for our pork chop air fryer recipe.  Yum, perfection every time!
