Pizza Pasta: A Delectable Low-GI Dinner Option with Chickpea Pasta


Craving the flavors of pizza but want a healthier, low glycemic index (GI) alternative?  Look no further than pizza pasta made with chickpea pasta.  This delightful twist on a classic favorite combines the goodness of chickpea pasta with the beloved flavors of pizza.  Today we will guide you through creating a delicious and satisfying low-GI dinner option that will leave your taste buds happy and your blood sugar levels stable. 



Pizza Pasta


I took my husband's love of pizza and pasta and created a new recipe that I knew he would be sure to love.  This pizza pasta recipe will be sure to quench your cravings while still staying within our low GI food plan.  I know, can you believe it?


Chickpea pasta was something I have been wanting to try for a while, and so I added it to our grocery order this last trip.  I looked it up and found it fell within the low glycemic index, being at 44 on the scale.  I thought oh, how lovely, now hubby can enjoy his favorite.  


I decided to make my own pizza pasta sauce to avoid all of those extras that are thrown into packaged foods, mainly sugar.  I try to avoid it as much as I can.  Well, let's get into the recipe so you can get to making a favorite with a new twist in your home.


The Benefits of Chickpea Pasta:

Chickpea pasta is an ideal base for a low-GI meal.  Made from nutrient rich chickpea flour, it offers numerous health benefits, including:

  • Low GI: Chickpeas have a low glycemic index, meaning they are digested and absorbed slowly, preventing spikes in blood sugar levels
  • High in Protein and Fiber: Chickpea pasta is packed with plant-based protein and dietary fiber, promoting satiety and aiding in digestion 
  • Gluten Free: If you have wheat allergies or gluten sensitives like I do, or follow a gluten free diet, chickpea pasta is an excellent alternative to wheat based pasta.

Pizza Pasta Recipe

What you will need:
  1. 1 box of Chickpea Rotini, cook according to package instructions 
  2. 1 package fresh white capped mushrooms, washed & chopped
  3. 1 green pepper, washed & chopped
  4. 1 onion, chopped
  5. 1 can of diced tomatoes
  6. 1 package sliced pepperoni 
  7. 1 T garlic powder
  8. 1 t onion powder
  9. 1 t Italian seasoning
  10. 1 t basil
  11. 1 t oregano
  12. 1 c mozzarella cheese 

What you will need to do:
  • Prepare and cook pasta according to packaging, set aside
  • Wash and chop onion and green pepper, place into olive oil coated skillet and cook until they begin to soften 
  • Add diced tomatoes when vegetables begin to soften
  • Add mushrooms (they do not take as long to cook)
  • Add spices to sauce and vegetable mixture
  • Add pepperoni
  • Add cooked pasta to skillet until warmed back up
  • Add mozzarella cheese, cook until completely melted, stir to create an even consistency of cheese
  • Plate and serve

Low GI Pizza Pasta


Do you see how evenly my vegetables are chopped?  My mother upgraded and gave me her Vidalia Chopping Wizard.  Oh my goodness, life changing... that is all I have to say.  Yes, I have other items I can use to chop up vegetables, but do I always use them?  No.  


This little wizard chopped an entire package of mushrooms and held them in the basin until they were all chopped.  I chopped the green pepper with it too.  I cut the top off and then cut it into four sections and chopped away.  I had all of the chopping finished for this dinner in no time flat.  I usually stand there and chop everything by hand because I do not want to clean the other items I have (not always quick & easy).  It went into the dishwasher and came out perfectly clean.  Ok, that was my share for today.


When my husband came home, he was pleasantly surprised he was having pasta for dinner.  It has been a while, I went ahead and fessed up it was chickpea pasta before he had a bite.  He didn't have much to say at first, but then after a few bites, he said this is delicious!  I thought wow!  Another score for dinner options.  I love it when I can add new ideas to our low GI menu.  


Customization and Serving Suggestions:

  • For a vegetarian option, incorporate sliced zucchini, spinach, or artichoke hearts
  • To make it heartier, include cooked chicken breasts, turkey or chicken sausage, or even ground beef, chicken, or turkey
  • Serve your pizza pasta with a side of fresh salad greens for a complete meal

This is the brand I picked up with our groceries, I have already added another box to our next order so I can come up with another recipe.  I get so excited about the smallest things in life.


Gluten Free Pizza Pasta


Hey, that just makes life less complicated, doesn't it?  I'd like to think so.  Look at all of those yummy vegetables and pepperoni sprinkled throughout this dish.  I am not much of a pasta fan, but I loved this.  


I like to make my own sauce when I do make pasta, it is so easy to do.  I either begin with diced tomatoes or whole peeled tomatoes.  I have cooked down the whole peeled tomatoes to create my own sauce before, but using the diced tomatoes is so easy.  No draining that can, just throw it all in.

Do you think you will give chickpeas a shot in your home?  I have made many things from chickpeas over the years, from brownies to meatless meatballs.  Can I just tell you how yummy the brownies are?  So good!  I need to make them again and give them a share here.
