Gluten free black bean brownie recipe

We have a fudgy black bean brownie recipe to share with you today.  I made it the week before the holiday and decided it was so yummy, we needed to have it for the Memorial Holiday weekend.


As you know from previous posts, my mother is not a fan of gluten free, but she said I think I like those brownies more than regular brownies.  Can you believe it?  I took that as an accomplishment and quite the compliment.


I also decided strawberries were in order for this brownie, and can I tell you how yummy this dessert is?  Oh my goodness, you will not be disappointed!  Plus... this is so easy you will wonder why you have not tried them before now.

What you will need:

  1. 1 can of black beans
  2. 3 eggs
  3. 1 t vanilla
  4. 1/4 cup cocoa
  5. 2/3 c sugar
  6. 1/2 t baking powder
  7. 1/4 t sea salt
  8. 1/2 c dark chocolate chips
  9. Package of fresh strawberries, cut in halves or fourths
  10. Hershey's syrup

What you will need to do:

  1.  Drain black beans, then place into food processor, puree black beans to form a paste like substance
  2. Place black beans into medium bowl
  3. Add eggs, vanilla, cocoa, sugar, baking powder, sea salt, mix well
  4. Stir in dark chocolate chips
  5. I baked my brownies in a 9 in pie plate at 350 degrees for 36 minutes, depending on your oven, you may need to add an additional 4 minutes
  6. Let cool
  7. Clean and cut strawberries and place in bowl, keep refrigerated until you are ready to serve
  8. Cut brownies to your liking, mine were cut like pie pieces
  9. Spoon desired amount of strawberries onto your brownie and drizzle with Hershey's syrup
  10. ENJOY!  Y-U-M!

The combining of the fresh strawberries, dark chocolate, Hershey's syrup all melting together is like fireworks in your mouth!  I love strawberries, but I am thinking any fruit you love could be used for this recipe.

I think this dessert would make the perfect addition to your July 4th festivities!  Mr. VS likes vanilla ice cream on his brownies, my mother and I enjoyed the strawberries.  That little bit of Hershey's
 syrup just gave it the perfect final touch! 


This is my new favorite black bean brownie recipe, it was so easy.  Once I had the black beans pureed in my food processor, I literally threw the rest of the ingredients into the bowl and said good enough.  I had a lot to do on Friday when we invited my mom over for dinner so there was no fussing with this dessert.


Plus, as we all know, fussing with recipes is not something I do anyway.  The lemon curd was the most fussing I have ever done with a recipe and I can tell you, I have not made it again.   


I get it, after you work all day then come home, do you really want to spend so much time making dinner and desserts?  My answer has always been no.  When we were first married, do you know I used to wake up every morning, make breakfast, pack lunches for both Mr. VS and I, then get the crockpot ready for dinner that evening?





His coworkers joked oh just wait, the lunches will disappear when the newness wears off.  When he told me that, I was like no way!  Well guess what?  It did!  I became pretty pressed for time, and there is so much planning that goes into having lunch ideas and things ready, then making sure all the ingredients were mixed in the crockpot every morning before I rushed off to work.  


I decided oh well, dinner on the fly is how we will roll around here.  I did get a little better in making sure I took out whatever meat I planned to make that evening, but the actual recipe?  Oh, that was either made up as I went, or I would type in the ingredients I had online and see what would come up.  


I began being inventive as a teenager making dinner every night so throwing things together was not new to me.  I can assure you my mother's pantry was so much better than my own though so I had to get even better at making menu items up here as an adult.  I would never write down what I threw into the dinner so it never tasted the same twice.  


I learned a lot through blogging, hey, you need to be a bit more precise when sharing recipes with folks.  I laugh at myself because sharing recipes was never actually something I thought of until my sister said you should share your recipes.  You really can come up with some good meals.  I gave it some thought, and so I decided why not?


To me, recipes are another extension of creativity.  Since my creativity was stifled for so many years, I think I have more than made up for it.  Ms. Vivian Rose Rowntree would be so proud.
