As a child, I always wanted to play with my new toys, but there was never time. As an adult, I think Christmas should be enjoyed to the fullest — toys played with, laughter filling the house, pups running around, and a cozy breakfast like this one starting the day.

Ingredients


Crust

  • 1 cup gluten‑free bread crumbs

  • 2 tbsp olive oil

  • Salt & pepper to taste


Filling

  • 2 potatoes, chopped into bite‑size pieces

  • 6 eggs + 1/4 cup water, whisked

  • 1/2 green pepper, chopped

  • 6 slices ham, cubed

  • 1/4 cup sliced cheese, cut into small pieces (or shredded cheese)


Instructions

  1. Preheat oven to 375°F.

  2. Grease a pie plate (or a larger baking dish for a bigger family).

  3. Mix olive oil and gluten‑free bread crumbs, then press into the bottom of the dish to form a crust. TIP: Don’t skip greasing the dish — the crust will stick without it.

  4. Place chopped potatoes in a small bowl with 2 tbsp water. Cover and microwave for 5 minutes on high.

  5. Chop ham, cheese, and green pepper.

  6. Whisk eggs and water together.

  7. Add ham, green pepper, and cheese on top of the crust.

  8. Pour whisked eggs over the filling.

  9. Bake at 375°F for 45 minutes.

  10. Remove from oven and serve warm.

Why I Created This Recipe


This casserole came from leftover ham one evening when I was tired of eating the same ole' thing. I love breakfast for dinner, and my husband loves ham, so this was a win‑win.

She showed her love through cooking, and if you turned down her sweets, you’d think the world had ended.


I can still picture those evenings — cousins playing under the table, twirling around support poles, sneaking extra cookies, and listening to my grandfather tell stories. Warm, simple memories that make me smile even now.


After dinner came presents, and the living room would be filled with gifts. As our family grew, we eventually only bought for the littles — and now even they’re grown. No more little ones running around, just pups who adore their grandma.
