Spice cake recipes can come in many forms, apple, pumpkin, etc...  This apple spice gluten free cake is the best moist spice cake recipe out there, at least that is our opinion, you can be the judge when you give this one a try.

I am going to just start by saying, I am going to knock your socks off with today's recipe share.  I am not usually a cake person, I am more of a cookie monster... but this cake may have converted me to a cake lover now.  Who even knew that was possible?  


It may not have started out as rainbows and puppy dogs with a few technical difficulties as you will see below.  If you follow us on TikTok, you may have already seen this video, but it is worth another look if you enjoy bloopers.


I am not sure if you can tell or not, but I was stunned.  I wasn't really sure how to handle the fact I was taking a video and then kerplunk!  The entire attachment falls off!  Thankfully round two went off without a hitch.  I just did not have the attachment on correctly.  





Ok, so has time flown this year or what?  Is it just me, or are you bobbing your head up and down and thinking where has 2022 gone already?  I know we have 5 months left in this year, but it is flying like no other year has, just my opinion of course.  Could be because we have been stuck under a rock for the past two years?  


Can you believe it is already the end of July?  Do you know what happens in July?  Oh, how about Christmas in July?  Now for some of you folks who think ugh... I am not even thinking about Christmas yet Cara.  How can you even bring it up?  


I will share with you that I have tried writing this post for a few weeks now, and got sidetracked with what I thought was more important stuff.  Maybe Christmas and I are not as tight as I thought we were or have been in the past?  Nah, I still love Christmas, how can I not?   


Christmas has always been my most favorite time of year, that is why I am bringing it up, but I think you figured that out after last year's décor overload throughout our home.  This year?  I am thinking I will dial it back a bit.  


Prepared apples for apple spice cake



All this talk of Christmas is making me get sidetracked from the reason I decided to bring up the lovely holiday in the first place, which brings me to THE CAKE.  Cake?  Yes, cake.  It is so good... no, good does not even begin to describe this cake.  It is extraordinaire, exemplary, wonderful, I can go on and on with the adjectives, but I will stop there and let you hear more about how it came to be. 
 

Mr. VS was reminiscing about his grandmother making an apple spice cake at Christmas time many years ago, he said it was the best cake he ever ate.  He loves spice cake, any spice cake really, he actually wanted it served at our wedding, but we decided to go with something else when it actually came down to it.


So I decided I would make his apple spice cake memories come to life, or at least that was my goal.  I mean, I could never replace his grandmother, they are special people after all, but I sure hoped my version of spice cake would be a hit.  


I read over recipes, and got a good feel of how I would make this cake, I went through our cupboards and decided I was going to do a little experimenting.  I decided to approach this cake like a science project.  A little of this, and a little of that... what I found with this cake is that the perfect balance of half almond flour, and half gluten free all purpose flour is the absolute best consistency for cake or any dessert for that matter.    


If you are watching your sugar intake, this will not be the recipe for you, but it is gluten free so there is that.  Mr. VS said this is SO GOOD!  He mentioned he wanted it for Christmas which made me think, hmm... maybe I should share this for my Christmas in July post with you.  


If I share it now, it gives you time to think it over and decide apple spice cake really is a good idea for Christmas, lol!  I definitely know it is good for fall, since I am really wishing fall was already here.  This humid weather is killing me, how about you?  Oh, and this would also be a delicious addition to the Thanksgiving dessert table.     

What you will need:
  1. 1 c almond flour
  2. 1 c all purpose gluten free flour
  3. 1 t cinnamon
  4. 1 t nutmeg
  5. 1/2 t cloves
  6. dash of pumpkin spice
  7. 1 t baking soda
  8. 1 t vanilla
  9. 2 sticks salted butter (s0ftened) 
  10. 1 c organic refined coconut sugar
  11. 1 c sugar
  12. 4 eggs
  13. 4 apples peeled and spiraled 


What you will need to do:
  • Preheat oven to 350 degrees
  • Peel apples & spiralize 
  • Place in bottom of greased 9x13 pan, set aside
  • Add dry ingredients together, stir
  • Add in rest of ingredients slowly until well mixed
  • Once everything has been mixed well, spoon batter over spiraled apples in baking dish
  • Place in oven for 35 minutes or until a toothpick comes out clean

As you can see, there was a kink in my plans with the spiralizer attachment, but I figured it out and we were able to move forward.  I was dumbfounded when it first happened and was just shocked for a second.  Then I laughed at myself after I stopped the video.  Good thing I can laugh at myself, and between you and I, it happens pretty often.   


After that mishap, I was afraid it would happen with every apple after.  Thankfully, take 2 went more smoothly, and then in no time I had all 4 apples completed, thank goodness.  The batter was not what I was expecting, and I almost thought maybe I needed to add some apple juice to it, but I decided against it, and in the oven it went.  




I am so glad I trusted my instinct and did not add anymore ingredients because this cake was over the top!  It was sweet, I am not used to adding sugar or much of it to a recipe, but this was Y-U-M-M-Y!  No complaints in that department.   


I am planning to make it for every holiday now.  Mr. VS loved it, and I know other family members will as well.  I imagine a dollop of whipped cream would make this even tastier and finish off this cake quite nicely.  


Do you have dishes you make for every holiday and over time they just become a part of the holiday season?  When I was growing up, my grandmother went over the top for every holiday when it came to cooking, and baking.  She should have had a bakery or restaurant in her hey day.  She really was that good. 


Oh my goodness, there were so many things she would make, cherries in the snow, pinwheel cookies, chocolate chip cookies, iced sugar cookies, 7 layer cookies, peanut butter chews, pies of varying kinds, peanut blossoms, gingerbread cookies, snowball cookies, thumbprint cookies, candy cane cookies, peanut butter cookies, angel food cake, and the list went on, and on.  Maybe this is where my love of cookies came from and how I became a cookie monster (yes, there is a story here, maybe I will share it another day)?  





There would be enough food for an army when grandma hosted dinner.  Do you know she had the smallest kitchen too?  Oh, the counter space?   Nonexistent...  I complain because I think I need more counter space, and then I think about the copious amounts of food my grandma made, and I think to myself, now Cara, let's not get spoiled.  


I actually have a decent amount of counter space, but it is not set up very well.  Plus, I am one of those gals who loves things on my counter.  I like to see what I am working with.  I am 100% a visual person.  How do you operate in your kitchen?  Do you like to see your appliances and what not, or do you like them out of sight, out of mind?  I am not sure what I would do without all of my junk, or umm... special pieces on my counter.
