Some call them sweet potato cakes, and others may call them sweet potato pancakes, and we have even heard sweet potato patties, any way you name them, they are delicious.  Sweet potato cakes are very simple to make, and will be a crowd pleaser for sure.

When you think of fall, what do you think of?  I think of our county fair, cooler temps, wind blown hair, jackets, jeans, wild socks with all sorts of designs, sweaters, sweatshirts, brisk walks, adventures, exploring, and those crazy leaves that fall every year and make a mess all over the place are what come to mind for me.  


Fall has always been a time to slow down, take time off, enjoy our surroundings, watch the leaves turn, and fall all around us.  We do not have any trees on our property, but we are surrounded by homes that have quite large trees.  Our street was developed in the 1920's, and I often wonder if many of the trees on our street were planted then?


While I love seeing the leaves turn and fall, the mold on the leaves has a negative affect on me every year, but that does not stop me from wanting to go outdoors and enjoy those crisp mornings.  Bentley and I love to go outside.  Just last week I noticed some of the maple leaves were beginning to fall, and I began to pick them up.  


Is there any food you think of when it comes to the fall season?  When it comes to food, I always think of sweet potatoes.  The funny thing is that I did not even like sweet potatoes until a few years ago.  Yes, seriously... I refused to try sweet potato casserole, or sweet potato pie, or even sweet potato pancakes.  


As a child growing up, we always had sweet potatoes with brown sugar and marshmallow casserole on the dinner table for the holidays, and I always avoided it like the plague.  While every other member of our family made their rounds and piled that casserole on their plate, I walked around it and moved on to other delicious foods.    


My grandparents, and parents, and cousins would encourage me to try this dish year in and year out, telling me how yummy it was, and I would steadily decline each holiday.  Yuck!  No way, I hate sweet potatoes I would say.


I am not sure what my aversion was to sweet potatoes, but it carried through to adulthood until one day I decided to give those gems a try.  I began with a sweet potato hash for breakfast, and then I kept going and never looked back.


Whew, thank goodness too because let me tell you I was missing out all of those years!  Now, I can honestly say I have still never had sweet potato casserole and I have not had them with brown sugar and marshmallow, but I love them as a savory dish... that is until I decided to give them a try for breakfast again, but in the pancake or cake form, whichever you prefer to call them.

This is one of the easiest recipes, not to mention yummy too which is why I am so glad I decided to give a sweet version of sweet potatoes a try.  I cannot say whether I will ever try the brown sugar and marshmallow casserole a try, but at least I have expanded my horizons... I can't win them all, all of the time, right?  


What you will need:
  1. 1 sweet potato
  2. 2 eggs
  3. 1 t vanilla
  4. 1 t cinnamon
  5. 1 T gluten free flour (optional) 

What you will need to do:
  • Wash sweet potato, cut into slices
  • Place in bowl with a bit of water in the bottom, cover with plastic wrap
  • Microwave on high for 4 minutes 
  • Remove from microwave
  • Roast potato in air fryer for 4 minutes, at 350 degrees
  • Remove, mash up sweet potato in bowl
  • Add remaining ingredients, mix thoroughly
  • Spoon batter into olive oil coated skillet in the form of pancakes
  • Cook on each side about 2 1/2 minutes or until slightly browned on both sides
  • Remove from skillet, plate, and enjoy!

Have you ever noticed sweet potatoes can be on the large side and they take forever to cook?  I sped up the process with a cooking hack my mom taught me.  When you put any veggies in the microwave and add a bit of water to the bottom of the glass dish, then place plastic wrap over it, it will make those veggies cook so much faster.  Sometimes I just give them a start in the microwave, then add to whatever dish I am making to be finished off so they absorb all of those delicious flavors.

I am kind of impatient like that.  Waiting for water to boil?  Yeah, not really my thing, I despise it, to me, it takes forever.  So when she told me to give that trick a try, I was all in.  This is the way I thaw my veggies for soups, and everything else in between.  No more waiting for this chic.


I can share with you this sweet potato cake recipe will be one I will use again, and again, and again.  I thought it was excellent.  Mr. VS is not a breakfast person so I did not even ask if he wanted to give them a try.  


That is one place where we differ.  I love breakfast, and I can eat breakfast for dinner any night of the week.  Him?  He is more your meat and potato guy and skips breakfast every day of the week.  Bad boy, I know... breakfast is the most important meal of the day afterall.


Recipe for sweet potato patties


I am sure after the sweet potato was roasted, I could have put it in my food processor to make life a bit easier, but I decided to mash that stinker up by hand.  Some days you just need a little relief and a sweet potato gets the brunt of your day.  Let's just say, I was having one of those days... and I said oh, mashing this up will be just what the doctor ordered.  


No worries, no sweet potatoes were harmed in the making of this recipe or the video below.  I can tell you that Bentley's favorite veggie is sweet potatoes so he is always right there at my feet hoping for scraps when I am cutting them up or mashing them.  He will eat them raw, but when they are softened up a bit, now that is his favorite.
