Almond Cinnamon Cookies


 I worked on a new gluten free cookie, see below for the recipe.  Since I like simple recipes, this one is an easy one!  

1 1/2 c corn flour (I used Maseca Brand) 

1 c sugar

1/3 c real butter

1 egg

1 T almond extract

2 t cinnamon 

1/3 c almond milk

Mix all ingredients together by hand or with a mixer.  Dough will be thick, but should not crumble when you roll it into a ball.  If it does crumble, add almond milk 1 tablespoon at a time.  

Roll into balls and flatten cookie with a fork.  You can sprinkle more cinnamon and sugar on top if you choose, I did not do this.  Bake at 350 degrees for 11 minutes.
